Lish Steiling’s Sweet And Spicy Ham

Yield: serves 8-10
Ham Ingredients:
- 1 (10-pound) bone-in ham
- 2 garlic cloves, thinly sliced lengthwise
- 1 ½ cups water
Glaze Ingredients:
- 1 ½ cups pure maple syrup
- ½ cup raw honey
- ¼ cup apple cider vinegar
- 1/3 cup freshly squeezed orange juice, from 2 oranges, carcasses reserved
- 1 teaspoon kosher salt
- 2 ½ tablespoons Calabrian chili paste
- 1 cinnamon stick
Ham Steps:
- Preheat oven to 325 degrees F
- Remove the skin from the ham and trim the fat to ¼ inch
- Score the fat into a 1-inch diamond pattern
- Make 1-inch-deep slits over the top of the ham (about 12 in total)
- Slide a few slivers of garlic in each slit
- Place the garlic-studded ham in a roasting pan and add enough water to cover the bottom of the pan
- Cover tightly with foil and bake for 1 hour and 30 minutes
- Uncover ham and brush 1/3 of glaze over the top
- Scatter the remains of the oranges and the cinnamon stick from the glaze along the bottom of the pan
- Put ham back in the oven uncovered and bake, basting in glaze every 20 mins, until golden brown and a thermometer reads 140 degrees F in thickest part (about 1 hour and 20 mins)
- For the last 40 mins crank the oven to 350 degrees F to help with browning
- Allow the ham to rest for 20 mins
Glaze Steps:
- In a medium saucepan combine maple syrup, raw honey, cider vinegar, orange juice, salt, Calabrian chili paste, and cinnamon stick
- Bring to a simmer over medium heat
- Stir until reduced by a third (about 30 minutes)
- Once reduced set aside to cool
- Reserve ¾ cup of the glaze to serve with finished ham
