French Toast Bites

Ingredients:

  • 1 pound Bacon
  • 1 pack of Kings Hawaiian sweet rolls
  • 6 large eggs
  • 1/4-1/2 cup of milk
  • 1 tbsp of pure Vanilla extract
  • 1-2 tbsp of cinnamon sugar (Mccormick is what I used)
  • Nonstick cooking spray
  • 3 tbsp melted Butter (optional to put on top)
  • Maple Syrup (a drizzle on top)
  • 10 ea. large eggs
  • 1 cup shredded cheese (sharp cheddar or Colby jack is fine)
  • milk (a splash or 2)
  • Salt & Pepper

Instructions:

  • With Kitchen shears, cut 1# Bacon across the middle and arrange the 1/2 slices on a Broiler pan. Bake 2 350 degrees for 10-15 minutes, till brown and crisp.
  • Open package of Hawaiian sweet rolls, remove from box, keeping them in one whole piece. Use a long serrated knife, cut across the short end into 1 inch strips. Then down the opposite length, at the roll divisions, into “Bites”
  • In a bowl combine eggs, milk, vanilla and cinnamon sugar. Whisk to combine.
  • Heat a large nonstick saute pan over medium heat. Spray with Non Stick Cooking Spray, dip Hawaiian roll bites into the egg mixture and lay into hot pan, cooking till brown on one side, and then flip and brown the other side.
  • Remove your french toast bites to a plate and keep warm.
  • In the same pan, spray again, crack 10 eggs into pam, add a dash of milk, season with salt and pepper, add shredded cheese, and start whisking to scramble the eggs. Cook to desired doneness.
  • Remove bacon from oven. Plate Toast bites with eggs and bacon. Top with butter if desired, drizzle with maple syrup.
