Cassava Fries with Garlic Herb Dip

Ingredients

  • 2 medium cassava roots, peeled and cut into fries
  • 2 tbsp olive oil
  • Seas salt and pepper
  • Fresh parsley, minced
  • 1/2 cup greek yogurt and 1 garlic clove, minced (for dip)

Instructions

  • Boil cassava pieces for 10 minutes, drain and pat dry
  • Toss with olive oil, salt and pepper
  • Bake at 425 degrees farenheight for 25-30 minutes until crispy
  • Serve with garlic herb yogurt dip
