Be’er & Malawah (Goat Liver & Crepes)

Ingredients

  • 2 cups flour
  • 3 1/2 cups milk
  • 3 eggs
  • 1/2 cup of sugar
  • Pinch of Salt
  • 2 whole goat liver (2.5 pounds)
  • 1/2 cup Vegetable oil
  • 1 large onion
  • 1 green bell pepper
  • 1 jalapeño
  • 3 garlic cloves
  • 2 tbsp. chicken bouillon
  • 1 tbsp. Black pepper
  • 1 tbsp. Garlic powder
  • 1 tbsp. Onion powder
  • 1/2 cup Cilantro
  • 1 lemon

Directions

Crepes:

  • Heat pan on medium-high.
  • Combine flour, milk, eggs, sugar, & pinch of salt. Blend until there are no more clumps. Pour mixture into pan.
  • Drizzle oil on top of crepe. Let the bottom brown, then flip.

Liver:

  • Thinly slice liver.
  • Chop onions, bell pepper, jalapenos, garlic, cilantro
  • Combine chicken bouillon, black pepper, garlic powder, onion powder. Season liver with this mixture.
  • Pour vegetable oil in separate pan. Add 75% of chopped vegetables, sauté for two minutes.
  • Add liver slices to pan. Cook until liver browns. Cook for 5-6 minutes.
  • Add in remainder of vegetables and cilantro. Cook for additional 2 minutes
  • Squeeze lemon over liver. Plate liver and crepes.
