JAMIKA PESSOA’S GRILLED PINEAPPLE SWEET TEA
- Cut one pineapple, reserve the core
- Cut pineapple pieces into spears
- Grill the spears and the core to get grill marks – this brings out the natural sweetness in the fruit so you don’t need to use a lot of simple syrup in the tea.
- Cut spears into chunks
- Freeze the chunks because they will keep your drink cold
- While those are freezing up – make your iced tea, any fruit flavored tea works. you simply to add the grilled pineapple core while you are steeping to infuse that fruit flavor into the tea
- Cool your tea
- Then stir in frozen pineapple chunks and add simple syrup to taste
