Instructions

  • Heat smoker to 250 degrees.
  • Rinse the oxtails off to clean them (just water)
  • In a separate bowl mix your seasonings: garlic powder, onion powder, sea salt, coarse pepper, and brown sugar
  • Roll oxtails in the seasoning bowl to make sure they are covered
  • Place seasoned oxtails directly on smoker
  • Leave in smoker for 6hrs or until 165 F internal temperature
  • After smoking is completed, place the oxtails on a 2inch metal pan
  • Add a ¼ cup of water to the pan
  • Wrap full pan in aluminum foil
  • Place in the oven at 175 F for 2 hours
  • Take out of the oven and let the meat rest for an hour before serving
