Vegan Mac & Cheese by Francesca Chaney

INGREDIENTS:

  • chickpea pasta
  • veggie broth
  • sea salt
  • pepper
  • garlic powder
  • coconut based cheddar cheese
  • coconut based mozzarella cheese
  • soy-free vegan butter
  • dairy free coconut milk
  • chia-seed turmeric breadcrumbs
  • chives

INSTRUCTIONS:

  1. Preheat oven to 350 degrees
  2. Boil chickpea pasta in veggie broth for 10 mins
  3. Strain chickpea pasta
  4. Season pasta with sea salt, pepper and garlic powder
  5. Add two tablespoons of butter
  6. Add 1/2 cup of cheddar cheese
  7. Add 1/4 cup of mozzarella cheese
  8. Add 1/4 cup of coconut based milk
  9. Mix until cheese is evenly coated on pasta
  10. Place into an oven safe pan
  11. Sprinkle breadcrumbs and chives
  12. Place in oven for 10-15 mins
  13. Take out of oven and lightly cool
