Michael Symon’s Carbonara

5 quarts of water

Salt, 1-2 tbsp for pasta water

1 pound pasta, dried (whatever you have!)

1 teaspoon olive oil

1/2 pound of diced smoked meat (whatever you desire!)

4 eggs

1 tbsp of pepper

A few sprigs of parsley

1 Cup Parmesan cheese, more if you want to add some at the end 😉


1) Boil 5 quarts of water, add salt

2) Add 1 pound of dried pasta for one minute (TIP: Never oil your pasta water)

3) Heat 1 teaspoon of olive oil in a skillet

4) Add 1/2 pound of diced smoked meat, until crisp

5) Whisk 4 eggs until foamy. Then, add Add 1 tablespoon of pepper, a bit of parsley, and 1 cup of parmesan cheese and set aside

6) Add reserve pasta water to deglaze the pan – then, turn off your fire. You’ll want to add in the cheese and egg mixture above to your pan

8) Add desired pasta and toss together well

9) Plate, top with some parmesan cheese and serve
