
Ingredients
2 medium sweet potatoes, roasted until soft
½ cup date purée (blend pitted dates with a splash of hot water until smooth)
2 eggs
¼ cup unsweetened almond milk
1 tbsp melted butter or coconut oil
1 tsp cinnamon + ½ tsp nutmeg
1 tsp vanilla extract
Pinch of sea salt
1 prepared whole-grain or almond flour crust

Instructions
Preheat oven to 350°F.
Mash or blend roasted sweet potatoes with date purée, eggs, milk, butter, spices, and vanilla until smooth.
Pour filling into crust and bake 40 minutes, until set in the center. Cool before slicing.
