Lime Garlic Cilantro Ribeye

Ingredients:

  • 1 (12-16 oz) ribeye steak
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • Juice of 1 lime
  • 3 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • 1 tbsp olive oil (optional, for extra moisture and searing)

Instructions:

  • Pat ribeye dry with paper towels.
  • Season both sides with salt and black pepper.
  • In a small bowl, combine lime juice, garlic, cilantro, and olive oil (if using).
  • Rub the marinade all over the steak, making sure it’s well coated.
  • Let it marinate for at least 30 minutes (or up to 4 hours in the fridge for deeper flavor).
  • Heat a large skillet (cast iron works best) over high heat.
  • Once hot, add a touch of oil. Add the steak and sear 3-4 minutes per side until a beautiful crust forms.
  • Continue cooking until the internal temperature reaches 135°F for medium. Remove from heat.
  • Let the steak rest for 5-10 minutes. Top with extra cilantro and a squeeze of lime juice.
