Probiotic Bowl

Ingredients

SAUERKRAUT DRESSING

  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon sauerkraut liquid
  • ½ teaspoon Dijon mustard
  • ¼ teaspoon monk fruit sweetener
  • TEMPEH
  • 3 tablespoons coconut oil
  • 4 ounces smoky tempeh, cut into bite-size cubes

BOWL

  • 2 cups baby spinach
  • ½ cup Turmeric Sauerkraut (page 282) or store-bought sauerkraut with 1 pinch grated turmeric added
  • ½2 medium avocado, diced
  • ¼ cup diced fresh jicama

Instructions

  • TO MAKE THE SAUERKRAUT DRESSING Whisk together the olive oil, sauerkraut liquid, mustard, and monk fruit sweetener in a small bowl. If the mixture is too thick, add 1 teaspoon of water and whisk well.
  • TO MAKE THE TEMPEH Heat the coconut oil in a frying pan over medium-high heat. When the oil is hot, add the tempeh. Sear the tempeh until it turns golden, 3 to 5 minutes on each side.
  • TO ASSEMBLE THE BOWL Put the spinach in a bowl and arrange the tempeh, turmeric sauerkraut, avocado, and jicama in separate sections on top. Drizzle with the sauerkraut dressing.
