New York Strip with a Chimichurri

Ingredients

Classic Chimichurri

  • Fresh parsley
  • Fresh oregano
  • Garlic cloves
  • Red pepper flakes
  • Salt
  • Black pepper
  • Red wine vinegar
  • Olive oil

Steak Strip

  • Granulated honey
  • Granulated sugar
  • Sea salt
  • White pepper
  • Black Pepper
  • Smoked paprika
  • Garlic powder
  • Rosemary
  • MSG
  • Worcestershire sauce
  • Olive Oil
  • Butter
  • Thyme
  • Garlic

 

Directions

  • Prep the herbs and garlic:
  • Finely chop the parsley and oregano leaves. Mince the garlic.
  • Mix the dry ingredients:
  • In a medium bowl, combine the parsley, oregano, garlic, red pepper flakes, salt, and black pepper.
  • Add the liquids:
  • Stir in the red wine vinegar and olive oil until well combined.
  • Let it rest. Allow the chimichurri to sit at room temperature for 15–30 minutes to let the flavors meld.
  • Lightly pulse all seasonings in a grinder (except black pepper) to a fine mixture (not powdery but not coarse)
  • Add black pepper.
  • Season steak with a little bit of Worcestershire sauce as a binder
  • Use a cast iron. Add olive oil. Sear all side.
  • Add butter, thyme and garlic. Baste.
  • Put in oven to get to 125°.
  • Slice and add Chimichurri over the top and serve.
