New York Strip with a Chimichurri

Ingredients
Classic Chimichurri
- Fresh parsley
- Fresh oregano
- Garlic cloves
- Red pepper flakes
- Salt
- Black pepper
- Red wine vinegar
- Olive oil
Steak Strip
- Granulated honey
- Granulated sugar
- Sea salt
- White pepper
- Black Pepper
- Smoked paprika
- Garlic powder
- Rosemary
- MSG
- Worcestershire sauce
- Olive Oil
- Butter
- Thyme
- Garlic
Directions
- Prep the herbs and garlic:
- Finely chop the parsley and oregano leaves. Mince the garlic.
- Mix the dry ingredients:
- In a medium bowl, combine the parsley, oregano, garlic, red pepper flakes, salt, and black pepper.
- Add the liquids:
- Stir in the red wine vinegar and olive oil until well combined.
- Let it rest. Allow the chimichurri to sit at room temperature for 15–30 minutes to let the flavors meld.
- Lightly pulse all seasonings in a grinder (except black pepper) to a fine mixture (not powdery but not coarse)
- Add black pepper.
- Season steak with a little bit of Worcestershire sauce as a binder
- Use a cast iron. Add olive oil. Sear all side.
- Add butter, thyme and garlic. Baste.
- Put in oven to get to 125°.
- Slice and add Chimichurri over the top and serve.
