Jerrelle Guy’s Overnight Bitter-ish Bay Leaf Lemonade

Yield: 6 cups

Ingredients:

  • 1 pound whole lemons (3 to 4 medium)
  • 6 to 8 bay leaves, fresh or dried
  • ½ cup honey or agave
  • 6 cups water

Instructions

  • Quarter the lemons and remove the seeds.
  • In a large pot, bring the lemon quarters, bay leaves, 6 cups water , and the honey to a gentle boil over medium heat and cook for about 15 minutes, or until the lemons soften and their white piths become transparent
  • Remove from the heat and allow the mixture to cool slightly.
  • Remove the bay leaves and set aside.
  • Blend the cooled mixture in a high-powered blender until liquefied. Strain through a sieve to remove any residual pulp.
  • MARINATE FOR 24 HOURS: Divide the lemonade between two quart containers, add the bay leaves back to the lemonade, cover, and chill in the fridge for at least 24 hours before enjoying.
