
Ingredients:
For the mascarpone cream:
- 18 grams gelatin powder (Knox)
- 55 grams water
- 144 grams heavy cream (1)
- 144 grams sugar
- 1 vanilla bean, split
- 432.5 grams mascarpone cheese
- 720 grams heavy cream (2)
For the tres leches:
- 17 ounces whole milk
- 3 1/2 ounces Carnation evaporated milk
- 3 1/2 ounces Lechera condensed milk
For the simple syrup:
- 2 cups water
- 2 cups sugar
To assemble:
- Diced and sliced strawberries
- Small pre-baked croissants
- Powdered sugar
Instructions
For the mascarpone:
- Mix gelatin powder into the water to bloom. Separately, in a small sauce pan, mix heavy cream (1) with sugar and bring to a boil, stirring often to prevent scorching. When it comes to a boil, add the gelatin water to the pan and continue to boil. Add the vanilla bean and reduce to a simmer for 3 minutes. Remove from heat and cool slightly.
- In a separate bowl, mix mascarpone cheese and heavy cream (2). Add the heavy cream (1) mixture to the bowl with heavy cream (2) mixture and use an immersion blender to puree until it gets silky with no clumps. Cover and refrigerate for 24 hours.
For the tres leches:
- Whisk all three milks together to create a tres leches syrup.
For the simple syrup:
- In a small saucepan, combine the water and sugar. Place over medium heat and cook, stirring occasionally with a rubber spatula, until the sugar is dissolved and it is beginning to simmer. Remove from the heat and cool completely.
To assemble:
- Preheat the oven to 350 degrees F. Cut as many croissants in half as desired and open like a book. Brush the simple syrup on the cut sides of the croissant and place on a rimmed baking sheet. Bake cut side up, for an additional 7 minutes
- Remove from the oven and cool completely. Drizzle the tres leches syrup on the toasted cut side of the freshly baked croissant. Place the mascarpone mixture in a piping bag and pipe the mascarpone decoratively on to the croissant. Top with diced and strawberries. Place the top of the croissant on top of the filling like building a sandwich and dust generously with powdered sugar. Best enjoyed alongside family and friends!
