Chef Josh Capon’s Horseradish Crusted Salmon

Ingredients
4 6-8oz Atlantic Salmon Filets
2 Cloves Fresh Garlic
1 Cup Red Onion, diced
1/2 Cup Fresh Dill, chopped
8 oz Fresh Horseradish, grated (or jarred)
Salt and Pepper to Taste
1/4 Cup Extra Virgin Olive Oil

2 Lemons, zested segments removed and chopped

Directions
Mince garlic and mix all ingredients together
Season the salmon with salt and pepper
Smear an even layer on top of a piece of salmon to form a crust
Preheat the oven to 400 degrees
Place the salmon on a lightly oiled baking sheet skin side down with 2 lemon halves facing up
Bake in the oven for about 10-12 minutes
Serve and enjoy
