Omar Tate & Cybille St. Aude-Tate’s McDonald’s Money Burger

Ingredients

  • 2 slices Japanese milk bread
  • 230g Onion
  • 230g Celery
  • 230g Green bell pepper
  • 10lbs Ground beef
  • 740g Mayo
  • 75g Dijon
  • 40g Lemon juice
  • 75g Hot sauce
  • 295g Trinity relish, strained of liquid
  • Caviar
  • Malt vinegar onions
  • Cooper sharp cheese
  • 24k gold leaf
  • Shaved truffles

Instructions

  • Cut onion, celery, and green bell pepper into 1-inch chunks. Pulse in robocoupe until finely chopped but not pureed.
  • Transfer mixture to layered cheesecloth and squeeze out all excess liquid.
  • Combine drained trinity and ground beef, mix thoroughly by hand.
  • Portion mixture to 4 oz balls and press flat to form patties.
  • Cook patty to preference.
  • Combine mayo, Dijon, lemon juice, hot sauce with a whisk until fully combined.
  • Fold in relish. Transfer to quarts.
