HONEY GARLIC SHRIMP
Ingredients:
- 1 lb large shrimp, peeled + deveined
- 3 tbsp butter
- 1 tbsp avocado oil
- 4-5 cloves garlic, minced
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1/4 cup honey
- 2-3 tbsp fresh lime juice
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2-1 tsp Old Bay seasoning
Instructions:
- In a bowl, toss shrimp with all ingredients until fully coated.
- Heat butter and avocado oil in a large skillet over medium-high heat.
- Add shrimp in a single layer and sear 2-3 minutes per side, until golden, opaque, and cooked
SEASONED WHITE RICE
Ingredients:
- 1 cup long grain white rice, rinsed
- 2 cups water
- 1 tbsp butter
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
Instructions:
- Bring water, butter, salt, pepper, and garlic powder to a boil. Add rice. Stir, cover, reduce heat to low and cook for 20 minutes.
- Fluff and keep warm.
BLACK BEANS
Ingredients:
- 2 (15 oz) cans low-sodium black beans, rinsed + drained
- 2 cups chicken broth
- 1/2 cup onion, diced
- 3 cloves garlic, minced
- Juice of 1 lime
- Juice of 1/2 orange
- 1 tsp ground cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp smoked paprika
- 1 bay leaf
- Salt + pepper to taste
Instructions:
- In a pot, sauté onion and garlic in a little oil until soft. Add all remaining ingredients. Simmer 15-20 minutes, mashing some beans for creaminess.
- Remove bay leaf, season to taste
FRIED CORN
Ingredients:
- 3 cups fresh corn (cut off cob)
- 1 red bell pepper, small dice
- 2 tbsp butter
- 2 tbsp avocado oil
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp onion powder
- Juice of 1/2 lime
- 2 tbsp brown sugar
- 2 tbsp fresh cilantro
Instructions:
- Heat butter and avocado oil in a large skillet over medium-high heat. Add corn and red pepper.
- Sauté 5-7 minutes until slightly charred.
- Season with garlic powder, onion powder, salt, and pepper. Add brown sugar and stir until caramelized. Remove from heat. Finish with lime juice and cilantro
CREAMY CILANTRO-JALAPENO VINAIGRETTE
Ingredients:
- 1 cup fresh cilantro
- 1/4 cup olive oil
- 2 tbsp lime juice
- 1 tbsp honey
- 1 shallot, chopd,
- 4 cloves garlic
- 2 jalapeños, seeded (for mild)
- 1/4 cup Greek yogurt
- 1/4 cup sour cream
- 1/2 tsp adobo seasoning
- 1/4 tsp blk pepper
- Splash of water (as needed)
Instructions:
- Add all ingredients to a blender.
- Blend until smooth, creamy, and pourable
- Add a splash of water if needed to thin
BOWL ASSEMBLY
Instructions:
- In a bowl, layer seasoned white rice, black beans, fried corn, honey garlic shrimp, sliced avocado, diced tomato (optional)
- Drizzle with creamy cilantro-jalapeño vinaigrette.
- Garnish with fresh cilantro and a squeeze of lime.
