Patti Labelle’s Fried Chicken

Ingredients

  • One 3-3 ½ lb chicken, rinsed and cut into 8 pieces
  • ½ teaspoon of salt, plus more to taste
  • ¼ teaspoon freshly ground black pepper, plus more to taste
  • 1 cup all-purpose flour
  • 2 large eggs
  • Vegetable oil, for deep frying

Instructions

  1. Line baking sheet with paper towels
  2. Season the chicken with ½ teaspoon salt and ¼ teaspoon pepper. Place the flour in a large paper bag (or large bowl) and season with salt and pepper. In medium shallow bowl, beat the eggs. One piece at a time, dip the chicken in the eggs, shake (or roll) in the flour to coat completely and place on a baking sheet.
  3. Pour enough oil into a large skillet, preferably cast-iron, to come one-third up the sides. Heat over high heat until very hot but not smoking. (If using an electric skillet, heat to 365 degrees F.) Using tongs, carefully add the chicken. Fry the chicken, uncovered, turning occasionally with the tongs, until the chicken is golden brown on all sides and shows no sign of pink when pieced in the thickest part (don’t turn down the heat unless the chicken is browning too quickly). Breasts and wings will cook in about 15 minutes, and the drumsticks and thighs will take about 20 minutes. An instant-read thermometer, inserted in the thickest parts of the chicken, will read 170 degrees F. Transfer to the paper towels to drain. Serve hot.

Patti’s Pointers

  • Don’t forget that white meat takes less time to cook than dark, so it should be removed from the skillet first.
  • And don’t try to squeeze a big chicken into the skillet – 3 ½ pounds is the max. To be sure it will fit, put the drumsticks and thighs in first, then the breasts. If the wings won’t fit, let the chicken in the skillet cook for 5 minutes; it will shrink enough to make space for the wings.

Patti Labelle’s Buttermilk Waffles

Ingredients

  • 1 cup of Patti’s Good Life Buttermilk Pancake & Waffle Mix
  • ¾ cup milk
  • 2 ½ tablespoons oil

Instructions

Lightly oil and preheat a waffle iron. Combine all ingredients in a bowl and mix gently until fully combined, but still a little lumpy. Bake according to waffle iron instructions.
