Cheesy Matza Burekas

INGREDIENTS
- 4 matzah squares
- 1 cup cottage cheese
- 1 cup sour cream
- 1 cup crumbled feta cheese
- 1 cup grated mozzarella cheese
- 1 cup shredded cheddar cheese
- 2 large eggs (for filling)
- 1 large egg (for egg wash
- “Everything but the Bagel” seasoning
- Sesame seeds for kitniyot (legumes) eaters
- Crushed almonds
- Dehydrated onions
DIRECTIONS
- Soften the Matzah – Wet the matzah squares thoroughly under water and wrap them in a clean kitchen towel. Let sit for 10 minutes to soften. If they’re not flexible enough, repeat the process.
- Make the Cheese Filling – In a bowl, mix the cottage cheese, sour cream, crumbled feta, mozzarella, cheddar, and 2 eggs until well combined.
- Assemble the Burekas – Once the matzah is soft and flexible, cut each sheet into 4 mini squares.
Place 1 teaspoon of cheese filling in the center of each square.
Fold from corner to corner and press at the tip to form a triangle. - Prepare for Baking – Place the Burekas on a parchment-lined baking sheet. If they rip slightly, don’t worry—the melted cheese will bond them together as they bake.
Brush each Bureka with beaten egg and sprinkle with your chosen topping. - Bake – Preheat the oven to 350°F (175°C) and bake for 25 minutes, or until golden brown.
- Serve & Enjoy – Enjoy with grated tomato drizzled with olive oil and a sprinkle of salt. For extra flavor, try stuffing them with hard-boiled egg or avocado. If using crushed almonds as a topping, a drizzle of honey is delicious too
