Lamb Chop Garlic Noodles

Ingredients
- 5 tbsp oyster sauce
- 10 tbsp hoisin sauce
- 1 cup brown sugar
- 5 tbsp fish sauce
- 1 and 1/4 cups low sodium soy sauce
- 2 and 1/2 tsp sesame oil
- Chives
- Red pepper flakes
- Grated parmesan
- Chef Matt’s AP Seasoning
- 1 lb thin spaghetti
- 4 tbsp Minced fresh garlic
- Olive oil
Instructions
- SAUCE
- Combine all sauce ingredients (fish sauce, low sodium soy sauce, hoisin, oyster sauce, brown sugar, sesame oil) and set aside.
- PASTA
- Cook pasta per package instructions in salted water and set aside.
- Mince garlic and sauté in a skillet with butter or olive oil.
- Toss the cooked pasta in the garlic infused oil and then add the sauce – toss to coat.
- Add grated parmesan cheese at the end and incorporate.
- LAMB CHOPS
- Season with salt and AP seasoning.
- Pan sear and finish in the oven until desired doneness is reached (medium).
- During the last 3-4 minutes in the oven, glaze with 1/4 cup of the garlic noodle sauce from above so that it caramelizes on the protein.
- Garnish with red pepper flakes, diced chives, and parmesan.
